DMC Free-From Brownies

These yummy brownies are the business. I have yet to get a bad comment on them.

Preparation time: 30 minutes (until you get good at it) | Baking time: 30 minutes
 
4oz dark (70% or more) or milk chocolate – the higher, the better for dark. If you take dairy then use a good quality milk cooking chocolate or Dairy Milk
1 tbsp coconut oil
2 large avocados (pureed). I use an electric baby puree machine as it makes all the difference (it does take more time though)
½ cup organic honey or healthy sweetner
1 tbsp vanilla extract
1 tbsp coconut flour
3 x eggs
½ tsp baking soda (gluten and wheat free)
½ tsp baking powder (gluten and wheat free)
½ tsp salt optional (I use it though)
  1. Melt the coconut oil and chocolate in a glass bowl over boiling water, stirring in between so it doesn’t curdle
  2. Puree the avocados in a food processor–make sure there are NO LUMPS. We want brownies, not guacamole!
  3. Fold the chocolate into the avocados in a large mixing bowl
  4. With an electric mixer, beat the remaining ingredients into the batter until smooth
  5. Grease a baking tinn (or brownie tin if you have one; these are a must if you ask me) and spoon in the batter, smoothing out at the edges
  6. Bake at 175 degrees for 30 mins. Cool, serve and enjoy!
